Braised Five-Spice Oxtail

Ingredients

1.5lbs to 4lbs Oxtail

1 whole star anise

2 garlic cloves, smashed

1 tsp five spice powder

2 tbsp light soy sauce

2 tbsp dark soy sauce

1 tbsp oyster sauce

1 tbsp Chinese cooking wine

Steps

  1. Trim oxtail fat. If desired, boil pot of water and place oxtail in for 5 minutes to remove additional fat.
  2. Mix ingredients in pot. Place oxtail in pot.
  3. Add enough cold water to cover meat.
  4. Bring to a boil. Then turn down to get slow simmer and then cover with lid but prop open slightly.
  5. Braise for 2 to 2.5 hrs. Stir periodically.
  6. Oxtail is ready when tender. Sauce will have a rich, velvety texture.

Notes

  1. Pot should fit oxtail snugly to avoid drying out meat.
  2. Check to make sure you have a slow simmer. Too fast will evaporate water too quickly and not allow oxtail to braise properly. Add a little water if necessary.
