Ingredients
1.5lbs to 4lbs Oxtail
1 whole star anise
2 garlic cloves, smashed
1 tsp five spice powder
2 tbsp light soy sauce
2 tbsp dark soy sauce
1 tbsp oyster sauce
1 tbsp Chinese cooking wine
Steps
- Trim oxtail fat. If desired, boil pot of water and place oxtail in for 5 minutes to remove additional fat.
- Mix ingredients in pot. Place oxtail in pot.
- Add enough cold water to cover meat.
- Bring to a boil. Then turn down to get slow simmer and then cover with lid but prop open slightly.
- Braise for 2 to 2.5 hrs. Stir periodically.
- Oxtail is ready when tender. Sauce will have a rich, velvety texture.
Notes
- Pot should fit oxtail snugly to avoid drying out meat.
- Check to make sure you have a slow simmer. Too fast will evaporate water too quickly and not allow oxtail to braise properly. Add a little water if necessary.
